Ellen's Monthly Recipe

Ahhhh May Day, a sometimes lusty celebration dedicated to fertility and the returning of the sizzling sexy sun! On this day some cultures celebrate by plaiting multicolored ribbons and winding wild flowers around a maypole and then invite others to dance around same while weaving their own ribbons and energies into the mix. This dance is said to symbolize the union of male and female; the joining of the two in order to create a third.

Faeries are known to be active during this mystical mating time as well and can be encouraged to lend their magical energies to all of your personal pursuits. One way to entice these fabulous little creatures is to offer them a small plate of Wild Flower Faerie Jam. Simply leave a bit of this delicious offering outside on this night or even place some on a windowsill or ledge (leaving the window open of course) in order to be the object of their gratitude and their fortunate blessings as well.

WILD FLOWER FAERIE JAM
(Makes Four Cups)

Ingredients:
2 cups water
2 cups pink or yellow (or both) fragrant/fresh rose petals taken from roses with the thorns removed. Remove white base from the petals as well.
2 ½ cups of super fine sugar
1/3 cup of freshly squeezed orange juice
2 tablespoons of Rose Water (you can find recipes for this on any internet search engine.)

In a large saucepan bring the 2 cups water to a boil and then decrease the heat so that the water is simply simmering. Add the rose petals and simmer an additional five minutes. Add the sugar and the orange juice and bring back to a rolling boil. Decrease the heat once again and simmer on low for one half hour. Gently stir until the sugar has dissolved and the mix begins to thicken. Add the Rose Water and let stand. To test for doneness, put a spoonful of the jam on a small plate and let cool. It if gels and wrinkles it is ready. Allow all jam to cool and store in Mason jars in the refrigerator for up to one month.
Don’t forget to leave a little plate for the little people. You’ll get big blessings.
